Fruit layer

  • 2 apples, Elstar or another sweet variety
  • 2 peaches, canned or fresh (peeled and pitted)

Topping

  • 1 cup flour
  • ½ stick butter, diced (plus extra for greasing)
  • ¼ cup sugar
  • 4 tablespoons oatmeal
  • 4 tablespoons peach juice (or apple juice if using fresh peaches)

  • Preheat the oven to 350 °F (180 °C). Grease the oven dish with butter.

  • Slice or cube the peaches and add them to the apples.

Topping

  • Make the topping by rubbing flour and butter between your fingers until coarse crumbs form.
  • Mix in the sugar and oats so the topping is evenly combined.
  • Stir the peaches into the apples and sprinkle the juice over the fruit to moisten it.
  • Spread the topping evenly over the fruit.
  • Bake for about 30 minutes, until the topping is golden and the fruit is bubbling. If needed, cover loosely with foil for the last minutes to prevent over-browning.

Notes

Peaches – Fresh peaches should be peeled, pitted and diced. Canned peaches work well too; reserve some of the syrup or juice for the recipe.

Oven temperatures – For a conventional oven use 350 °F (180 °C). For convection ovens, reduce to 320 °F (160 °C).

Storage

  • Make-ahead (unbaked) – Prepare the fruit and topping separately, keep chilled up to two hours, and assemble just before baking.
  • Freezer (unbaked) – Assemble in the oven dish, wrap tightly and freeze up to one month. Bake from frozen, increasing bake time to about 40 minutes and covering with foil for the final 10 minutes if needed.
  • Baked – Avoid long storage of the baked crumble; the topping will soften and lose its crispness.
