How to make Andhra-style Pesarattu premix (step-by-step)
- Wash the whole moong beans and the raw rice thoroughly to remove dust. Drain in a colander and spread on a clean cloth to remove excess water. Make sure the grains are completely dry before roasting.
- Dry-roast the green chillies, sliced ginger, and curry leaves lightly until fragrant. Remove and set aside.
- Add cumin seeds to the same pan and roast for about 30 seconds—watch closely to avoid burning—then combine with the other roasted aromatics.
- Dry-roast the whole moong beans and rice in batches over medium heat until they give a nutty aroma and are lightly toasted. Turn off the stove and allow everything to cool.
- Combine the roasted moong, rice, roasted chillies, ginger, curry leaves, and cumin. Add a pinch of asafoetida and salt. Once completely cool, grind to a fine or slightly coarse powder according to your preference. Store the premix in an airtight container in a cool, dry place.

- Mix the premix with water to a smooth, pourable dosa batter consistency. Let it rest for about 10 minutes to hydrate.
