Ingredients
Pumpkin Waffle
- 4 eggs
- 1 T vanilla
- 1 1/2 cups milk
- 1 stick melted butter
- 1 cup pumpkin puree
- 1 T cinnamon
- 1 T sugar
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 2 cups flour
- 2 T baking powder
Buttermilk Syrup
- 4 T butter
- 1/2 cup buttermilk
- 1 cup sugar
- 1 tsp vanilla
- 1 tsp baking soda

Beat all waffle ingredients together until smooth and well combined. Preheat your waffle iron and cook according to the manufacturer’s directions until golden and crisp.

For the syrup, combine the butter, buttermilk, and sugar in a saucepan and bring to a gentle boil over medium heat.

Remove the pan from the heat and stir in the vanilla and baking soda.

The mixture will bubble up noticeably when you add the baking soda, so use a deep pan and stir until the bubbling subsides. Serve the warm syrup over the freshly cooked pumpkin waffles.
