  • 1 cup all-purpose flour, sifted

  • 6 tbsp unsalted butter, room temperature

  • 1.2 oz freeze-dried strawberries, processed into a fine powder
  • 1 1/2 cups granulated sugar
  • 4 large egg whites
  • 2 tsp vanilla extract
  • 1/8 tsp salt
  • 1 1/2 cups unsalted butter, room temperature and cut into tablespoon pieces

Single Layer Vanilla Bean Cake

  • Position the oven rack in the center or just above center and preheat to 350ºF. Lightly grease and flour a 9-inch round cake pan or use a flour-based baking spray.
  • In a medium bowl, whisk together the sifted flour, baking powder, and salt. Set aside.
  • In a separate bowl, beat the unsalted butter and granulated sugar with a hand mixer or stand mixer fitted with a paddle attachment on medium-high until light and fluffy.
  • Add the egg whites and beat until incorporated. Stir in the vanilla bean paste, scraping down the sides of the bowl as needed.
