They sit in the fridge, ready to eat, and require no morning prep. They’re also perfect for anyone who wants a healthy, grab-and-go breakfast.

I remember the first time I saw a dragonfruit. I wasn’t sure what to make of it, but curiosity won and I bought one. The first one I tried was the white-fleshed variety because the pink wasn’t available. Inside it looked like a huge kiwi, only white and without a solid center. The flavor was underwhelming — rather bland — and I didn’t buy any more for a while. Later I found a pink variety and it tasted much better. After a little reading I learned that the difference was likely ripeness rather than color. That first fruit was probably underripe.

Once I discovered how good a ripe dragonfruit can be, it started appearing in many dishes. It’s enjoyable on its own and works well in smoothies and breakfasts. I often debate whether to add it to a smoothie or to overnight oats. If the fruit is perfectly ripe, it goes into my oats; if it’s a bit bland, it gets blended into a smoothie. Either way, dragonfruit adds a pleasant touch.

Overnight Oats with Dragonfruit and Dates

Ingredients
- 2 dragonfruits
- 100 g rolled oats
- 1 tablespoon date paste or two dates
- 250 ml almond milk
- ½ teaspoon vanilla extract
Instructions

Pour the almond milk into a blender and add the date paste or the pitted dates. Blend until smooth and combined.

In a bowl, combine the oats, vanilla, and the sweetened almond milk and stir well. While the oats hydrate, peel and chop the dragonfruit. Alternatively, you can blend the dragonfruit; it will be quite liquid at first but will thicken into a gel-like texture if left in the fridge for about 15 minutes.

Layer the oats and dragonfruit alternately into two jars, cover, and refrigerate. Enjoy your ready-to-eat breakfast the next morning.
