Christmas is just around the corner and the house feels full of holiday excitement. This year my parents are coming for the holidays and my toddler, who is almost three, truly believes in Santa. Watching him discover the magic of the season — from books to movies to baking simple treats for neighbors and friends — has made the holidays even more joyful.

One of our family favorites is Magic Cookie Bars. Some call them Hello Dollies, others call them 7-layer bars. Whatever name you use, the idea is the same: a buttery crust topped with layers of chocolate, nuts, coconut and a sweetened condensed milk layer that holds everything together in gooey, irresistible bites.

When I switched to dairy-free eating I worried I’d have to give up these classic bars. Then I discovered how well sweetened condensed coconut milk works in place of traditional condensed milk. It gives the same rich, caramel-like flavor and keeps the bars dairy-free and paleo-friendly when paired with the right crust and sweetener.

These bars start with a grain-free cookie crust that is softer than the typical graham-cracker base, yet sturdy enough to support the layers above. I like using a mix of hazelnut flour and coconut flour for a tender, slightly nutty base. The filling of chocolate chips, chopped pecans, and shredded coconut is finished with the reduced coconut sweetened condensed milk, creating caramelized pockets of flavor throughout.

The result is a dessert that’s grain-free, dairy-free, and free of refined sugar — perfect for holiday trays, potlucks, or an easy treat to bake with kids. They hold together nicely after cooling, and the slightly crisp edges contrast with the gooey middle for the perfect bite.

Grain-Free Magic Cookie Bars (Dairy-Free, Refined-Sugar-Free)

These grain-free magic cookie bars use a homemade sweetened condensed coconut milk to achieve the classic sticky, sweet layer without dairy or refined sugar. Makes about 18 bars.

Ingredients

For the Coconut Sweetened Condensed Milk:

  • 1 can full-fat coconut milk
  • 1/4 cup pure maple syrup
  • 1/4 tsp salt

For the Cookie Crust:

  • 1/2 cup hazelnut flour (almond flour works as a substitute)
  • 1/2 cup coconut flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup coconut oil or dairy-free butter, melted
  • 1/4 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract

For the Bars:

  • 1 1/4 cup chocolate chips (dairy-free if needed)
  • 1/2 cup chopped pecans
  • 1/3 cup unsweetened shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan and set aside.
  2. Prepare the coconut sweetened condensed milk: in a small saucepan combine the coconut milk, maple syrup, and salt. Bring to a gentle simmer over medium heat and cook, stirring occasionally, until reduced to about 1 cup of liquid. This takes approximately 25–30 minutes. Watch closely — the mixture will thicken and the surface may bubble or splatter as it reduces. Pour into a measuring cup to confirm you have about 1 cup.
  3. While the coconut milk reduces, make the crust. In the bowl of a food processor (or a mixing bowl) combine the hazelnut flour, coconut flour, salt, and baking soda. Pulse or stir to blend. Add the melted coconut oil or butter, maple syrup, egg, and vanilla. Process or mix until a smooth dough forms.
  4. Press the dough evenly into the prepared pan. Bake the crust for 15 minutes, until set and lightly golden.
  5. Remove the crust from the oven and immediately top with 1 cup of chocolate chips, pressing them gently into the warm crust so they begin to melt. Sprinkle the chopped pecans and shredded coconut evenly over the chocolate.
  6. Pour the reduced coconut sweetened condensed milk over the layers so it seeps into the gaps. Sprinkle the remaining 1/4 cup chocolate chips and a little extra coconut on top if desired.
  7. Bake the assembled bars for about 25 minutes, until the top is set and lightly browned.
  8. Allow the bars to cool completely — at least 1 hour — before slicing into squares. Cooling helps the layers set and makes slicing cleaner.
