Shirataki noodles are keto-friendly, making Blackstone Low Carb Peanut Chicken Noodles an excellent low-carb dinner cooked right on the griddle for anyone watching carbs and calories.
If you prefer, you can easily swap in any cooked noodles to make a more traditional stir-fry with the carb level you want.
How to make Blackstone Low Carb Peanut Chicken Noodles
Begin by marinating bite-sized pieces of chicken in soy sauce, garlic, fresh or paste ginger, and an optional seasoning blend.

Prep the rest of your ingredients while the chicken marinates, then heat your Blackstone or flat top griddle.
Use a keto-approved peanut sauce if you want to keep the dish very low in carbs—store-bought sauces work fine, but check labels for sugar content.

On a preheated medium griddle, add oil, then cook the marinated chicken with sliced red bell pepper for about 6 to 7 minutes, stirring occasionally so everything browns evenly.

Add the rinsed shirataki noodles directly to the griddle.

Pour in the peanut sauce and scatter in chopped fresh cilantro. Toss everything together so the sauce coats the chicken, peppers, and noodles.

Cook just a few more minutes until the noodles are heated through and the flavors have combined.

Ingredients
- 1 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 3 tablespoons soy sauce
- 4 to 6 cloves garlic
- 1 tablespoon fresh grated ginger or ginger paste
- kosher salt, pepper, seasoning blend of choice (optional, I used Blackstone Teriyaki seasoning)
- cooking oil of choice
- 1 red bell pepper sliced
- 2 (7-ounce) pouches shirataki noodles (or regular cooked noodles of choice) rinsed
- 1 (12-ounce) jar store bought peanut sauce of choice
- 1 bunch cilantro chopped
- Toppings: crushed peanuts, lime wedges
Instructions

Put the chicken in a gallon-size plastic bag and add soy sauce, garlic, ginger, kosher salt, pepper, and seasoning blend if desired. Massage to combine and marinate in the refrigerator for at least an hour.

Preheat your griddle to medium. Add cooking oil, then the chicken and sliced bell pepper. Cook 6 to 7 minutes, stirring a few times until the chicken is cooked through and peppers are tender.

Add the rinsed shirataki noodles, peanut sauce, and chopped cilantro. Cook 2 to 3 minutes, tossing occasionally. Taste and adjust seasoning with salt and pepper if needed.
