Why spinach and zucchini?

Spinach blends smoothly into sauces and has a mild flavor that disappears beneath the rich, cheesy sauce. Using spinach is an easy way to boost the nutritional value—adding iron and vitamins—without changing the familiar macaroni and cheese taste. Zucchini contributes moisture and a silky texture when grated finely; once mixed with the green sauce, it becomes nearly invisible, so even hesitant eaters usually don’t notice it. Together, spinach and zucchini keep the sauce creamy and naturally colored, eliminating the need for artificial food coloring.

I developed this recipe while my youngest was moving from purees to finger foods. Baking the mac and cheese in muffin cups made each portion easy for her to grip, and the compact shape helped keep the cheese from becoming too runny on the tray. - 2 ~2.5 cups macaroni pasta uncooked
- 1/2 tsp olive oil
- 1 cup packed baby spinach
- 2/3 cup whole milk
- 1 zucchini
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups shredded cheddar cheese
- 1 cup grated parmesan cheese
- 1 egg whisked

Preheat your oven to 400°F (about 200°C) and place a rack in the middle position so the cups brown evenly.

Cook the pasta until al dente according to package directions. Use approximately 2.5 cups of large-shell pasta or 2 cups of small macaroni, depending on the shape you prefer. Drain the pasta and toss it with the olive oil to keep it from sticking; set aside.

In a blender, combine the packed baby spinach and the whole milk. Blend until completely smooth to create a vivid green milk mixture that will form the base of the sauce.

Grate the zucchini using the large holes of a box grater. There is no need to squeeze out excess moisture—some liquid helps keep the final mixture creamy.

In a medium pot over medium heat, melt the butter. Stir in the flour and whisk continuously until the roux turns a pale golden color and becomes slightly bubbly; this cooks off the raw flour taste.

Slowly pour in the spinach-milk mixture while whisking to avoid lumps. Stir in the shredded cheddar and grated parmesan and continue whisking until the cheeses melt into a smooth, thick sauce. The sauce may feel quite thick at this stage—adding zucchini and pasta softens it.

Remove the pot from heat. Add the grated zucchini and the cooked pasta, folding gently with a spatula so each piece is coated in the green cheese sauce.

Stir in the whisked egg until fully incorporated; the egg helps the cups set while baking and creates a slightly firmer texture once cooled.

Line a muffin tin with silicone cups or lightly grease a standard tin. Spoon the mac and cheese mixture into each cup, pressing lightly to compact the pasta so the cups hold together after baking.
