Ingredients
- Crust:
- 1 cup raw pecans
- 5 large soft dates
- 1/4 teaspoon sea salt
- 1/4 teaspoon cinnamon
- 1–2 teaspoons water, as needed
- Filling:
- 2 ripe pears, peeled
- 1 teaspoon lemon juice (optional)
Instructions
- In a food processor, combine the pecans, dates, salt, and cinnamon. Pulse until well combined and the mixture holds together when pressed. Add water a teaspoon at a time if the mixture is too dry.
- Press the crust mixture into two small bowls or tart dishes, forming an even base and slightly compacting the edges.
- Process the peeled pears in the food processor until smooth. Add lemon juice if you like a bit of brightness in the filling.
- Divide the pear puree between the two crusts, smoothing the tops.
- Chill the tarts briefly if you prefer them cold, or enjoy immediately. They’re delicious either way.
Notes
To lower the fat and calorie content slightly, replace 1/2 cup of pecans with 1/2 cup of oats in the crust. For extra flavor, add a dash of cinnamon or a splash of vanilla to the pear filling. These tarts make a great small pre-workout snack when you need quick, natural energy.
