Why You’ll Love This Oven Baked Beef Rib Recipe

Grilling is great, but not everyone has the space, time, or desire to smoke or grill outdoors. This oven method delivers rich, barbecue-style flavor with minimal fuss. Whether you want fall-off-the-bone ribs or ribs with a little bite, the low-and-slow oven approach produces reliably tender, flavorful results.

Should Meat Fall Off the Bone or Not?

Traditional barbecue usually aims for tender ribs that still have a slight tug—too-soft meat can indicate overcooking. That said, some people prefer ribs so tender they fall off the bone. Both are valid: cook to the texture you enjoy.

Store-Bought BBQ Sauce or Homemade?

You can use a favorite store-bought sauce or make your own. Either works great with this recipe. A thick, slightly sweet and tangy sauce that clings to the meat will caramelize nicely under the broiler, but choose whatever you enjoy.

How to Make Oven Baked Beef Ribs

This recipe was tested with pre-sliced, separated beef ribs, but it works with other rib cuts—just adjust cook time for thickness.

  1. Marinate (optional): Whisk soy sauce, Worcestershire, apple cider vinegar, liquid smoke, minced garlic, and olive oil. Divide ribs between two large zip-top bags, pour in the marinade, seal, and refrigerate overnight for deeper flavor. If short on time, you can skip the marinade and proceed.
  2. Bring to room temperature: Remove ribs from the fridge 30–45 minutes before cooking so they cook evenly.
  3. Preheat oven: Set oven to 275°F (150°C). Line a baking pan with foil for easier cleanup.
  4. Prepare the ribs: Pat ribs dry with paper towels. Drizzle with a little olive oil and rub it over both sides so the dry rub adheres.
  5. Apply dry rub: Mix the seasoning blend and coat the ribs thoroughly, pressing the rub into the meat.
  6. Wrap tightly in foil: Seal ribs in 2–3 layers of foil so they steam and stay juicy while baking. Place on the prepared pan.
  7. Bake low and slow: Bake for 2–3 hours, depending on thickness. Check at 2 hours; thicker, meatier ribs may need 3–4 hours. Ribs are done when they’re fork-tender and the meat pulls back from the bone.
  8. Finish under the broiler: Carefully open the foil, pour off excess fat if desired, brush ribs with melted butter (optional) and a generous layer of BBQ sauce. Broil 5–7 minutes until the sauce bubbles and caramelizes—watch closely to prevent burning.
  9. Rest and serve: Let ribs rest 5–10 minutes, then serve with extra sauce on the side and your favorite sides.

Pro Tips

  • Don’t skip the dry rub. It’s the foundation of flavor—feel free to be generous with it.
  • Keep the oven door closed as much as possible to maintain steady low heat for even, tender results.
  • For a smokier taste, add 1/2 tsp liquid smoke to the olive oil before rubbing it on the ribs or brush a little directly onto the meat.
  • If there’s a lot of rendered fat in the pan, pour some off before saucing so the glaze adheres better and caramelizes evenly.

Serving Suggestions

Serve these ribs with classic sides like coleslaw, baked beans, corn on the cob, or cornbread. Dinner rolls or potato salad are great casual options too.

  • 1 tbsp onion powder
  • 1/2 tbsp chili powder
  • 2 tsp ground cumin
  • 1/4 tsp cayenne pepper optional, for heat
  • salt and pepper for taste
  • 2 1/4 tsp apple-and-honey rub optional

For the Ribs

  • 5 lbs meaty separated beef ribs

Rib Marinade

  • 1 tbsp olive oil
  • 3/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 1/2 tsp apple cider vinegar
  • ½ tsp liquid smoke
  • 2 tbsp minced garlic

Instructions

  • Marinade

Whisk soy sauce, Worcestershire, apple cider vinegar, liquid smoke, minced garlic, and olive oil until combined. Place ribs into two large zip-top bags, divide the marinade between the bags so ribs are coated, seal, and refrigerate overnight if time allows.

  • Prep the Ribs

Remove ribs from the fridge and let them come to room temperature for 30–45 minutes. Preheat oven to 275°F (150°C) and line a baking pan with foil. Pat ribs dry so the rub adheres.

  • Season with Dry Rub

Mix the dry rub ingredients and press the seasoning onto both sides of the ribs.

Wrap ribs tightly in 2–3 layers of foil and place on the baking pan. Bake 2–3 hours, depending on thickness, until fork-tender and meat pulls back from the bones.

  • Sauce & Finish

Carefully open the foil to avoid steam. Pour off excess fat if desired, brush ribs with melted butter (optional) and coat with BBQ sauce. Broil 5–7 minutes until the sauce bubbles and caramelizes.

  • Rest & Serve

Let the ribs rest 5–10 minutes, slice or pull as desired, and serve with extra sauce and sides like coleslaw.

Notes

Important Pro Tips

Marinade: Marinating overnight adds deeper flavor, but it’s optional. If you do marinate a large pack, divide ribs between bags to coat evenly without overcrowding.

Bring to room temperature: Let ribs sit 30–45 minutes before baking so they cook evenly.

    • Don’t be shy with the seasoning—meaty ribs can handle bold flavors.
    • Check tenderness at 2 hours; add time as needed. Thicker ribs may take 3–4 hours to become fork-tender.
    • Keep the oven door closed as much as possible to maintain steady heat.
    • There will be rendered fat and liquid in the pan—pour some off before saucing if you prefer a better glaze adhesion.

This recipe works well with either a store-bought BBQ sauce or your homemade favorite—use what you love.
