Peppermint Cheesecake Macarons

I adore classic holiday cookies like peanut butter blossoms and chewy gingerbread, but for me nothing beats macarons — especially when they have a festive twist. These Peppermint Cheesecake Macarons combine the delicate texture of a French macaron shell with a creamy, minty cream cheese filling for a flavor that’s both nostalgic and bright.

The recipe begins with a reliable macaron shell method: a stable meringue, well-sifted dry ingredients, and careful folding until the batter reaches that perfect, lava-like consistency. Sifting the almond flour and powdered sugar twice and ensuring your meringue reaches stiff peaks without drying are small steps that make a big difference. If you want the shells to have a subtle peppermint hue, stir 1/8 teaspoon peppermint extract into the whipped egg whites just after the meringue forms and before adding dry ingredients, or add a touch of red gel food coloring for striped shells.

These macarons are filled with a peppermint cream cheese frosting that balances richness and freshness. Once sandwiched, they are finished with a drizzle of melted white chocolate and a sprinkle of graham cracker crumbs for texture and visual appeal. The combination of crumbly graham, silky white chocolate, and tangy-sweet mint filling makes each bite feel like peppermint cheesecake in miniature.

Ingredients for Peppermint Cheesecake Macarons

Before you begin, check your pantry for these key ingredients. Macarons require a few specialty items, so it helps to gather them ahead of time.

  • Almond flour: Use super-fine almond flour for the best texture.
  • Powdered sugar: Helps create the macaron shell and is used in the filling.
  • Granulated sugar: Stabilizes the egg whites to form a strong meringue.
  • Egg whites: About 120 g (roughly 4 large egg whites) at room temperature. Precision matters — pasteurized carton egg whites are not recommended.
  • Gel food coloring: Optional, but use gel rather than liquid to avoid altering the batter’s consistency. For a peppermint look, add a few red gel streaks inside the piping bag before filling with batter.
  • Cream cheese and unsalted butter: For the peppermint cream cheese frosting.
  • Peppermint extract: Use sparingly — too much will overpower the filling and taste medicinal.

How Do I Store Macarons?

Macarons can be stored several ways depending on when you plan to serve them. Choose the option that suits your schedule:

  1. Refrigerate assembled macarons: Fully assembled macarons will keep 2–4 days in an airtight container in the fridge.
  2. Refrigerate shells only: Shells stay fresh 4–6 days before assembly. After filling, assembled macarons will keep an additional 2–4 days.
  3. Freeze fully assembled macarons: After filling and allowing them to mature 12–24 hours in the fridge, freeze assembled macarons for 2–3 months. Thaw in the fridge or at room temperature a few hours before serving; once thawed they remain good for 2–4 days.
  4. Freeze shells only: Baked and cooled shells freeze well in an airtight container for about 3 months. Transfer frozen shells to the fridge several hours before assembly and then fill as usual.

Ingredients

For the Macarons:

  • 120 g egg whites (approx. 4 large eggs), room temperature
  • 100 g granulated sugar
  • 200 g powdered sugar
  • 120 g almond flour
  • Gel food coloring of choice (do NOT use liquid coloring)
  • Peppermint cream cheese frosting (one batch)

For the Garnish:

  • 85 g white chocolate, melted (optional)
  • Graham cracker crumbs (optional)

Instructions

  1. Prepare dry ingredients: Sift the almond flour and powdered sugar together into a medium bowl. Set aside.
  2. Whip the egg whites: In a stand mixer with the whisk attachment, whip the egg whites on medium speed until foamy. Continue until the whisk leaves visible trails in the foam.
  3. Make the meringue: Gradually add the granulated sugar once trails are visible, increase speed, and whip on high until the meringue forms. Add gel food coloring if desired, then beat to stiff peaks. Avoid over-whipping.
  4. Fold in dry ingredients: Remove the bowl from the mixer and fold the dry mix into the meringue with a rubber spatula. Fold from the bottom up and press the batter through the middle against the side of the bowl. The batter will thin as you fold. Aim for a smooth, lava-like consistency.
  5. Test consistency: Use the figure-eight test: lift batter with the spatula and let it flow in a figure eight. If it flows without breaking, stop folding.
  6. Pipe shells: Transfer batter to a pastry bag with a medium round tip. Pipe 1.5-inch rounds about an inch apart on parchment-lined baking sheets.
  7. Remove air bubbles: Gently bang each baking sheet on the counter a few times to release bubbles so shells do not crack in the oven.
  8. Dry the shells: Let piped shells rest 30 minutes or until a skin forms. On humid days this can take up to an hour. They are ready when batter does not stick to your finger.
  9. Preheat oven: Preheat to 300°F (150°C) with an empty sheet pan placed on the center rack to preheat as well.
  10. Bake: Bake one tray at a time on top of the preheated sheet pan for 18–20 minutes, rotating halfway through.
  11. Cool: Let shells cool on the sheet pan for 10 minutes, then peel parchment and transfer to a wire rack to cool completely. If bottoms are slightly sticky, allow extra cooling on the tray; if brown or over-baked, remove immediately.
  12. Make filling: While shells cool, prepare the peppermint cream cheese frosting.
  13. Assemble: Pipe the frosting onto half the shells, pair with similar-sized shells, and gently sandwich together.
  14. Finish: Drizzle with melted white chocolate and immediately sprinkle graham cracker crumbs if using. Store assembled macarons in an airtight container in the refrigerator for up to 5 days and bring to room temperature before serving.

Notes

Macarons often taste best after resting. Allowing filled macarons to mature in the fridge for 12–24 hours improves flavor and softens the shells, giving the ideal chewy texture. If shells are initially too crisp, maturation helps them absorb moisture from the filling and become tender.
