Once a month we invite the newly married couples from our church for a casual potluck evening. To keep the atmosphere relaxed, guests bring appetizers or side dishes to share.

I like to vary the menu so it doesn’t get repetitive, but sometimes time runs short and elaborate dishes aren’t practical. For those occasions I keep a quick fallback recipe that’s easy to assemble at the last minute.

These prosciutto-wrapped mozzarella sticks are a reliable go-to. We often have store-bought mozzarella sticks in the fridge because my kids enjoy them as snacks, and prosciutto is a staple for sandwiches—so it’s common to have both ingredients on hand.

Both ingredients are widely available at most grocery stores, which adds to the convenience.

To stretch the prosciutto and make the portions more bite-size, I slice each prosciutto piece lengthwise and wrap half around a cheese stick. Then I slice the wrapped cheese in two to yield smaller pieces. This saves money, reduces waste, and creates easy-to-eat portions for gatherings.

Prosciutto-Wrapped Mozzarella Sticks

No-fuss appetizer that requires only two ingredients. Prosciutto-wrapped mozzarella sticks are easy to prepare and excellent as a low-carb, protein-rich snack.

Ingredients

• 8 pieces thinly sliced prosciutto, or more as needed
• 8 pieces mozzarella string cheese, or more as needed

Instructions

1. Cut each prosciutto slice lengthwise with kitchen scissors. Take one cut piece and wrap it around one mozzarella string.
2. Slice the wrapped cheese in half to create two bite-size pieces. Arrange on a platter and serve.
