I learned I was adopted when I was very young and have known nothing different my whole life. Adoption is part of who I am, and I’m proud of it.

  • Adoption touches millions of American families. Like me, my brother was adopted at birth.

Over its 90-year history, Honey Maid has also evolved. Originally she topped pumpkin cake with graham crackers, chocolate chips and large marshmallows. Since her passing, we’ve updated the recipe with small changes that make it our own: folding graham cracker crumbs into the batter for more flavor, using chocolate bars instead of chips for an even melt, and topping with mini marshmallows for a more attractive finish.

Ingredients

For the Cake:

  • 1 cup all-purpose flour
  • 2 cups graham crackers, pulverized into crumbs
  • 1 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup oil
  • ½ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 (15-ounce) can pumpkin puree

For the Topping:

  • 26 ounces Hershey’s chocolate bars (about 6–8 bars)
  • 2 cups mini marshmallows

Instructions

For the cake:

  • Preheat the oven to 350°F. Spray a 9×13-inch baking dish with cooking spray and set aside.
  • In a large bowl, whisk together the flour, graham cracker crumbs, brown sugar, baking powder, cinnamon, ginger, nutmeg, cloves and salt.
  • In another bowl, mix the oil, milk, eggs, vanilla and pumpkin puree until smooth.
  • Combine the wet and dry ingredients and mix until well blended. Spoon the batter into the prepared baking dish.
  • Bake at 350°F for about 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Immediately remove the cake from the oven. While the oven is off, arrange the chocolate bars evenly over the hot cake and return the pan to the warm oven for about 2 minutes, or until the chocolate softens and begins to melt.
  • Take the cake out again and, using a spatula, spread the melted chocolate over the top to create an even layer.
  • Top the chocolate with the mini marshmallows in an even layer.
  • Turn on the broiler and place the pan under the broiler for about 1–2 minutes to toast the marshmallows. Watch closely — marshmallows can brown very quickly. You can rotate the pan after 30 seconds for more even toasting.
  • Remove from the oven and let the cake cool slightly. Serve warm for a gooey treat or let it cool completely if you prefer a firmer slice.
