Strawberry Rice Krispie Treats Recipe — Soft, Fruity Bars

Happy Valentine’s Day! Do you love Valentine’s Day or dread it? I’m somewhere in between. In our home the holiday is low-key — our anniversary falls a few days earlier and our children are still young — but I like to mark the day with a small celebration. This morning we enjoyed a simple Valentine’s breakfast and baked heart-shaped Strawberry Rice Krispie treats to share with a few neighbors.

This twist on a classic is just as quick and easy as regular Rice Krispie treats, and my three-year-old had a blast helping. If you need a fast, kid-friendly sweet today, give these a try. You may already have everything on hand.

Strawberry Rice Krispie Treats

A nostalgic sweet treat with a Valentine’s twist.

Equipment

13 x 9 inch pan (or similar baking dish)
Heart-shaped cookie cutter
Mixing spoon and spatula

Ingredients

  • 3 tablespoons butter
  • 1 (10 oz) package marshmallows
  • 6 cups Rice Krispies cereal
  • 2 cups freeze-dried strawberry slices, crushed
  • 1/2 pound almond bark
  • Red food coloring (optional)

Instructions

  1. In a large pot, melt the butter over low heat. Add the marshmallows and stir until completely melted.
  2. Remove from heat and fold in the Rice Krispies cereal and the crushed freeze-dried strawberries until evenly coated.
  3. Press the mixture evenly into a 13 x 9 inch pan coated with cooking spray. Allow to cool until set.
  4. Use a heart-shaped cookie cutter to cut the cooled slab into hearts.
  5. Melt the almond bark according to package directions. If desired, stir in 2–4 drops of red food coloring for a pink/red dip.
  6. Dip half of each heart into the colored almond bark and place the dipped treats on wax paper to cool completely.
