Ingredients

  • 1/4 cup (57g) coconut oil
  • 3 oz dark chocolate (or 6 tbsp dark chocolate chips)
  • 2/3 cup (40g) all-purpose flour (can use GF measure-for-measure flour)
  • 1/4 cup (21g) cocoa powder
  • 1/2 tsp salt
  • 2 large eggs
  • 2 tbsp honey
  • 1/4 cup (43g) dark chocolate chips

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with a silicone baking mat or parchment paper.
  2. In a small saucepan over low heat, melt the coconut oil and dark chocolate together, stirring occasionally until smooth.
  3. Whisk the flour, cocoa powder, and salt together in a small bowl.
  4. In a mixing bowl, combine the eggs, honey, and the melted coconut oil–chocolate mixture. Stir until combined.
  5. Fold in the dry ingredients and the dark chocolate chips, mixing by hand just until combined.
  6. Use a cookie scoop to portion the dough onto the lined baking sheet. This recipe yields about 12 cookies.
  7. Bake 16–18 minutes for a fully baked cookie, or 14–16 minutes for a fudgier center.
  8. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack. Store in an airtight container.
