Crispy Air Fryer Kielbasa (Kovbasa) Recipe

Making kielbasa in the air fryer is fast, simple, and delicious. Kielbasa (also spelled kovbasa or kubassa in some Ukrainian communities) is a traditional Polish/Ukrainian sausage often served with perogies or cabbage rolls. It was a regular part of my family’s meals growing up and remains a favorite today.

Using an air fryer to cook kielbasa saves time and energy compared with boiling, baking, or pan-frying. The air fryer keeps your kitchen cooler and requires little cleanup. This method works well for weeknight dinners, holiday spreads, or casual get-togethers and is suitable year-round.

🥘Ingredients

All you need is a ring of kielbasa and a non-propellant oil spray:

  • 1 ring kielbasa (kovbasa/kubassa), about 750 g
  • Oil spray (non-propellant)

📖Variations & Substitutions

  • Kielbasa – Use pork kielbasa for the classic flavor or choose turkey kielbasa for a leaner option. You can use store-bought, deli, or homemade sausage.
  • Oil – Avocado or canola oil sprays are best for air frying because of their high smoke points. Olive oil works as well. Be sure to use a non-propellant spray designed for cookware to avoid damaging the air fryer coating.
  • Serving – Serve with mustard or barbecue sauce. For appetizers, slice the kielbasa into 1-inch rounds and air fry in a single layer for a shorter time.

Lightly spray the bottom of the air fryer basket or drawer with a non-propellant oil spray.

Cut the kielbasa ring into four equal pieces. Place the pieces in the air fryer basket or drawer in a single layer. Poke each piece a few times with a fork to allow rendered fat to drain to the bottom.

You can remove the casing before cooking or leave it on and peel it off after the sausage is cooked if you prefer.

Spray the top of the kielbasa with a light coating of oil (a 3–5 second spray is sufficient with most non-propellant bottles).

Cook at 375°F (190°C). Air fry for 7 minutes on one side, then flip and cook an additional 6 minutes on the other side.

Note: If your kielbasa is thinner, reduce the time—try 3–4 minutes per side and check for doneness.

The kielbasa is done when an instant-read thermometer inserted into the thickest part registers 160°F (71°C).

If you left the casing on, remove it now. Slice and serve warm with yellow mustard or your preferred condiment.

🌡️Storage

Store cooled, cooked kielbasa in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze in an airtight container for up to 3 months; thaw in the refrigerator before reheating.

This recipe yields approximately 8 servings, depending on portion size. Serve whole pieces for a main dish or slice into rounds for appetizer servings.

💭Top Tip

Always use a non-propellant oil spray in your air fryer. Aerosol sprays with propellants can damage the nonstick coating and may cause flaking. Check the label to ensure the spray is safe for cookware.

🔢WW Points

Traditional pork kielbasa is higher in points; for example, 3 oz of pork kielbasa is around 11 WW points. Choosing turkey kielbasa reduces the points significantly (about 3 WW points per 3 oz). The recipe is low in carbs.

🦺Food safety

  • Cook kielbasa to a minimum internal temperature of 160°F (74°C).
  • Do not use the same utensils for cooked food that touched raw meat without washing them first.
  • Wash hands thoroughly after handling raw meat.
  • Do not leave perishable food at room temperature for extended periods.
  • Never leave cooking food unattended.
