Sheet pan meals are perfect for busy weeknights—toss ingredients on a pan, roast, and enjoy an easy dinner with minimal cleanup. Here’s a healthy sheet pan take on fried rice using cauliflower rice and baked eggs.
I wasn’t always sold on cauliflower rice—texture and expectations can be tricky—but when you bake it until it’s crisp at the edges, then top it with a runny fried egg and a drizzle of tamari, it becomes hard to resist.

Baking the cauliflower gives a pleasant crunch that more closely mimics traditional fried rice. And for me, a baked (or fried) egg beats scrambled every time.

Ingredients
- 1 ½ cups frozen mixed vegetables, thawed
- 1 yellow onion, chopped
- 4 cups riced cauliflower (about 1 head)
- 1 tablespoon sesame oil
- ¼ cup gluten-free tamari (or soy sauce if not gluten-free)
- 2 cloves garlic, minced
- ¼ cup chopped green onions, for topping
Instructions
- Preheat oven to 375°F (190°C).
- Spray a large baking sheet with non-stick spray.
- In a large bowl, combine the mixed vegetables, chopped onion, riced cauliflower, sesame oil, tamari (or soy sauce), and minced garlic. Toss until evenly coated.
- Spread the mixture evenly across the prepared baking sheet.
- Use the back of a wooden spoon to make four shallow indentations in the cauliflower mixture. Lightly spray each indentation with extra cooking spray.
- Crack an egg into each indentation. Bake for 15–20 minutes, or until eggs are set to your liking.
- Remove from the oven, top with chopped green onions, and serve immediately.
