Sheet pan meals are perfect for busy weeknights—toss ingredients on a pan, roast, and enjoy an easy dinner with minimal cleanup. Here’s a healthy sheet pan take on fried rice using cauliflower rice and baked eggs.

I wasn’t always sold on cauliflower rice—texture and expectations can be tricky—but when you bake it until it’s crisp at the edges, then top it with a runny fried egg and a drizzle of tamari, it becomes hard to resist.

Baking the cauliflower gives a pleasant crunch that more closely mimics traditional fried rice. And for me, a baked (or fried) egg beats scrambled every time.

Ingredients

  • 1 ½ cups frozen mixed vegetables, thawed
  • 1 yellow onion, chopped
  • 4 cups riced cauliflower (about 1 head)
  • 1 tablespoon sesame oil
  • ¼ cup gluten-free tamari (or soy sauce if not gluten-free)
  • 2 cloves garlic, minced
  • ¼ cup chopped green onions, for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a large baking sheet with non-stick spray.
  3. In a large bowl, combine the mixed vegetables, chopped onion, riced cauliflower, sesame oil, tamari (or soy sauce), and minced garlic. Toss until evenly coated.
  4. Spread the mixture evenly across the prepared baking sheet.
  5. Use the back of a wooden spoon to make four shallow indentations in the cauliflower mixture. Lightly spray each indentation with extra cooking spray.
  6. Crack an egg into each indentation. Bake for 15–20 minutes, or until eggs are set to your liking.
  7. Remove from the oven, top with chopped green onions, and serve immediately.
