On chilly days I always crave warm, starchy food, and this dish satisfies that craving without fuss. It’s simple to prepare and works as a complete meal on its own.

This recipe combines tender strips of beef with chewy udon noodles and earthy shiitake mushrooms. Bright notes from lime and fresh coriander lift the dish so it doesn’t feel too heavy. If you prefer, swap or add vegetables to suit your taste.

Cooking Beef & Mushroom Udon Noodles

This stir-fry is made entirely on the hob and takes under 30 minutes from start to finish. There’s no need to use the oven — just a wok or large frying pan. It’s ideal for busy evenings when you want something quick, tasty and satisfying.

What are udon noodles?

Udon are thick Japanese noodles with a pleasantly chewy texture. Traditionally made from flour, water and salt, they can be handmade (the traditional method even uses body weight to knead the dough) or purchased dried or fresh. Udon are versatile — served hot in broth, tossed through a stir-fry, or chilled and served with dipping sauce and grated vegetables.

If you use fresh or pre-cooked chilled udon (straight-to-wok style), they heat through quickly in the pan and soak up the sauce nicely.

Delicious soft noodles with tender steak

Ingredients

  • 2 teaspoons Olive Oil or fry lite
  • 300 g Rump steak fat trimmed, sliced thinly (approx. 2–3 mm)
  • 1 Garlic clove peeled and very finely chopped
  • Fresh Ginger 2cm piece peeled and chopped finely
  • 1 Yellow Pepper cut into matchstick pieces
  • 1 Box shiitake mushrooms roughly chopped
  • Bunch spring onions 6, chopped into 1 cm pieces
  • Salt & black pepper to season
  • 300 g Chilled udon noodles I used straight-to-wok ones
  • 2 Tablespoons soy sauce
  • Half a lime squeezed
  • Handful chopped fresh coriander

Instructions

  • Heat olive oil (or fry lite) in a wok or large frying pan. When hot, add the steak, garlic and ginger. Fry for 3–5 minutes until cooked through but not overcooked.
  • Remove the beef and keep it warm.
  • In the same pan, add the pepper, spring onions and mushrooms. Fry for about 5 minutes until softened, seasoning with salt and black pepper.
  • Add the chilled udon noodles and stir-fry for about 3 minutes until heated through.
  • Return the beef to the pan, add the soy sauce and lime juice, stir and heat for a couple of minutes so everything is well combined.
  • Stir in the chopped coriander and serve immediately on hot plates.
  • Dig in and enjoy.
