How To Make Smoked Egg Salad
If you haven’t smoked eggs before, I like smoking mine on a low setting so the eggs pick up smoke without overcooking. Smoking keeps the whites tender while adding a subtle smoky flavor to the yolks.
Step 1: Cut the smoked eggs in half and place the yolks in a bowl.
Step 2: Tear or chop the egg whites into bite-sized pieces.
Step 3: Chop your vegetables—celery and bell peppers work great; slice pickles or onions to your preferred thickness.

Step 4: In a bowl, mash the egg yolks and mix in mayonnaise, a little mustard (optional), and dry seasonings like garlic powder and onion powder. Season with salt and pepper to taste.
Step 5: Fold the chopped egg whites and diced vegetables into the yolk mixture until evenly combined.

Step 6: Taste and adjust the seasonings. Add a bit more mayo if you prefer a creamier texture, or a touch of mustard or vinegar for brightness.
Step 7: Serve on your favorite bread or enjoy chilled as a dip or side.

How to store leftover smoked egg salad
Store smoked egg salad in an airtight container in the refrigerator for 2 to 3 days. Keep it chilled and discard if it develops an off smell or texture.
