On hot, humid days there’s nothing better than an iced-cold slice of watermelon. One evening when a sweet craving hit, I remembered a whole watermelon chilling in the refrigerator. With a few pantry and fridge staples—vanilla Greek yogurt, fresh berries, and a sprinkle of coconut—I turned that chilled round into a playful, healthy dessert inspired by ideas I’d seen online.

The result was far more refreshing and satisfying than a piece of chocolate, and it felt lighter and better for me. You can certainly cube the watermelon and layer it in a glass or jar with the same toppings, but slicing a 1-inch round and cutting it into “pizza” slices makes this dessert festive and fun.

Watermelon Pizza

Yield: 8 servings (from one large 1″ center slice)

A fun, light way to enjoy watermelon—creamy yogurt, fresh berries, and a touch of coconut on a watermelon “crust.”

Ingredients:

  • 1 seedless watermelon round, cut 1″ thick from the center
  • 5.3 oz vanilla Greek yogurt (single-serving container)
  • Fresh raspberries
  • Fresh blueberries
  • Fresh blackberries
  • 4–6 Bing cherries, optional
  • 1/8–1/4 cup unsweetened shredded coconut

Directions:

  1. Cut a 1-inch-thick round from the center of the watermelon—the widest part.
  2. Place the round on a platter and slice it into quarters, then cut each quarter in half to make 8 “pizza” slices.
  3. Spoon or spread vanilla Greek yogurt over each slice.
  4. Top with a mix of fresh raspberries, blueberries, blackberries, and cherries if using.
  5. Sprinkle with shredded coconut and serve immediately.
