Keto Cinnamon Rolls made in the air fryer or the oven are one of my favorite breakfast treats. Golden-brown, tender cinnamon rolls topped with a sweet cream cheese icing—perfect with a cup of coffee or tea. These low-carb rolls have about 2g net carbs each and can be prepared either in an air fryer or baked in the oven.

Inspired by a similar fat-head dough technique, these cinnamon rolls use shredded mozzarella and cream cheese to create a pliable, low-carb dough. The result is a buttery, cinnamon-sweet interior and a luscious cream cheese icing on top.

Enjoy one or two of these warm, iced rolls for a decadent but keto-friendly breakfast. They can be quickly made in the air fryer or baked in the oven if you prefer.

Ingredients
Fat-Head Roll Dough
- 1 cup shredded mozzarella cheese (not fresh)
- 2 oz cream cheese
- ¼ teaspoon xanthan gum
- 1 cup almond flour
- 2 teaspoons baking powder
- 2 tablespoons low-carb granular sweetener
- ½ teaspoon vanilla extract
- 1 large egg
Cinnamon Filling
- 2½ tablespoons butter, softened (room temperature)
- 2½ tablespoons low-carb granular sweetener
- 1 teaspoon ground cinnamon
Icing
- 2 oz cream cheese
- 1½ tablespoons heavy whipping cream
- ½ teaspoon vanilla extract
- 2 tablespoons powdered low-carb sweetener
- 1 teaspoon orange zest (optional garnish)

Instructions

Place the shredded mozzarella and 2 ounces of cream cheese in a microwave-safe bowl. Heat in 30-second intervals, stirring between intervals, until melted and smooth.

Remove from the microwave and add the xanthan gum, baking powder, almond flour, and 2 tablespoons of the granular sweetener. Mix to combine.

Knead the mixture with your hands until it begins to form a dough. Add the egg and vanilla, then continue to mix and knead until you have a slightly sticky, homogenous dough.

Place the dough between two sheets of parchment paper.

Use a rolling pin to flatten the dough into a thin rectangle. Set aside.

In a small bowl, combine the ground cinnamon and 2½ tablespoons sweetener.

Remove the top parchment sheet and spread the softened butter evenly over the dough.

Sprinkle the cinnamon-sweetener mixture over the butter using a small sieve for even coverage.

Carefully roll the dough into a tight log. Using a sharp knife or dough cutter, slice the log into about 10 equal rounds.

Preheat your air fryer to 350ºF (180ºC). Place the rolls on a parchment-lined tray or basket, making sure they don’t touch. Air fry for 5–6 minutes, flip, then cook another 4–5 minutes until golden. Cook in batches if needed.

While the rolls cool slightly, combine the icing ingredients—cream cheese, heavy cream, vanilla, and powdered sweetener—in a medium bowl and whisk until smooth.

Spoon or pipe the icing over the cooled rolls and finish with optional orange zest. Serve warm.
Hint: Air fry in batches so rolls aren’t touching; overcrowding prevents even browning.
