From August through March (except December) our family is in full birthday mode. This week we celebrated my oldest a little early and decided to change our usual apple pie and ice cream tradition. Instead, I made ice cream filled cupcakes using Mayfield® Turtle Tracks ice cream — a perfect choice for these warm days. I’d seen similar cone-style cupcakes before and thought these looked simple enough to try. I don’t bake often, so this was a fun treat to put together, and the kids loved them (recipe and steps below).

Ingredients:

1 box milk chocolate cake mix
3 eggs (use amount called for on the cake mix box if different)
Vegetable oil (according to box directions)
Mayfield® Turtle Tracks ice cream (or your favorite flavor)
Icing or frosting of choice
Sprinkles for decoration
Knife (any size works; smaller knives are easier to control)

Instructions:

1. Prepare the cupcakes following the directions on the cake mix box. Bake and let them cool completely before proceeding.

2. Use a knife to cut a small circle from the top of each cupcake. Remove the cut piece and hollow out the center to create a cavity for the ice cream.

3. Fill each hollowed cupcake with a scoop of ice cream. Pack it gently so the cupcake holds its shape.

4. Replace the cupcake tops, then refrigerate or freeze the filled cupcakes until the ice cream is firm and the cupcakes are chilled.

5. When ready to serve, frost each cupcake and add sprinkles for a festive finish.
