This is one of my favorite quick breakfast recipes: simple to make, nutritious, and easy to customize. The combination of beet, strawberry and a little sweetener creates a smooth, vibrant drink that works well for busy mornings or a post-workout boost.

Ingredient notes

  • Beet – Use a small to medium beet. Scrub well and dice before blending.
  • Strawberries – Frozen strawberries work great; you can also use a mixed berry blend.
  • Dates – Pitted dates naturally sweeten the smoothie. If you prefer, substitute 2 tablespoons honey or maple syrup and adjust to taste.
  • Yogurt – Plain Greek yogurt or a dairy-free alternative adds creaminess.
  • Almond milk – Or any milk of your choice to reach the desired consistency.

Method

Smoothies are quick and fuss-free. For this beet smoothie, simply add all ingredients to a blender and blend until smooth—about one minute in a high-speed blender.

If you use frozen strawberries, 2/3 cup milk should give a creamy, scoopable texture. If your berries are fresh, start with 1/4 cup milk and add more until you reach your preferred thickness.

Tips

I recommend a high-power blender (like a Vitamix or similar) for the smoothest texture—smaller single-serve blenders can struggle with tougher ingredients like raw beet.

Ingredients 

  • 1 medium beet
  • 1 cup frozen strawberries
  • 1/4 cup dates, pitted
  • 2/3 cup almond milk
  • 2 tbsp plain yogurt, can use dairy free

  • Chop the beet into bite-size pieces.
  • Place all ingredients into a blender and blend until smooth.
