Creamy Vegan Tomato Pasta Recipe for Quick Weeknight Dinners

I love pasta, and one of my favorite styles is a vodka or pink sauce pasta. It’s comforting and rich, but often a little heavy. That’s why I created this lighter, plant-based version: Vegan Creamy Tomato Pasta. It’s cozy enough for date night and quick enough for an easy weeknight dinner—deliciously satisfying without weighing you down.

This Vegan Creamy Tomato Pasta uses simple ingredients: fresh garlic and shallot, rigatoni (or your preferred pasta), vegan butter, canned tomato sauce and paste, and unsweetened dairy-free creamer to make a silky, creamy sauce. Finish with fresh basil and a sprinkle of parmesan—vegan if you prefer—for a flavorful, well-rounded meal.

How is this Creamy Tomato Sauce made vegan?

To keep the sauce vegan and lighter, this recipe swaps traditional butter and heavy cream for vegan butter and an unsweetened dairy-free creamer. If desired, finish the dish with vegan parmesan. These simple swaps maintain a rich, creamy texture while reducing heaviness and keeping the recipe plant-based.

How to make Vegan Creamy Tomato Pasta…

This dish is quick and simple—about 25–30 minutes from start to finish.

  1. Cook pasta according to package directions until al dente. Reserve a small cup of pasta water if you want to loosen the sauce later.
  2. Finely chop the shallot and mince the garlic.
  3. In a skillet over medium heat, melt the vegan butter. Add the shallot and garlic and sauté for about 5 minutes until softened and fragrant.
  4. Stir in the tomato paste and cook 1 minute to deepen the flavor.
  5. Add the canned tomato sauce, a pinch of salt and pepper, then lower the heat and simmer for a few minutes to meld flavors.
  6. Stir in the dairy-free creamer and Italian seasoning, then taste and adjust salt and pepper as needed. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
  7. Drain the pasta and toss it with the sauce until well coated. Taste and adjust seasonings.
  8. Serve topped with fresh basil and parmesan or vegan parmesan if preferred.
  9. Enjoy!

Vegan Tomato Sauce Pasta FAQs…

What type of pasta should I use?

Rigatoni is a great choice because its ridges and tubes trap the sauce, giving every bite lots of flavor. Penne or ziti would work well too.

Which dairy-free products work best in this recipe?

Choose an unsweetened, unflavored dairy-free creamer so the sauce stays savory. A high-quality vegan buttery spread works well for sautéing. These choices help produce a creamy texture and balanced flavor.

Tip: Make sure the creamer is unsweetened and unflavored to avoid adding sweetness to the sauce.

Can I customize this dish?

Yes—adjust seasonings to your taste. Crushed red pepper flakes add heat, and extra herbs like oregano or parsley work well. If you prefer a heartier meal, add sautéed mushrooms, roasted vegetables, or a plant-based protein.

Tip: Because some dairy-free creamers can have a slight sweetness, be generous with salt, pepper, and herbs to balance the flavors.

How to serve this recipe…

Serve simply with fresh basil and grated parmesan or vegan parmesan. For added protein, try pan-fried tofu, white beans, grilled chicken, shrimp, or vegan sausage depending on your diet.

How to store Vegan Creamy Tomato Pasta…

Store leftovers in an airtight container in the refrigerator for up to one week. Reheat gently on the stove with a splash of water or dairy-free creamer to loosen the sauce.
