Ingredients

Pumpkin Waffle

  • 4 eggs
  • 1 T vanilla
  • 1 1/2 cups milk
  • 1 stick melted butter
  • 1 cup pumpkin puree
  • 1 T cinnamon
  • 1 T sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 cups flour
  • 2 T baking powder

Buttermilk Syrup

  • 4 T butter
  • 1/2 cup buttermilk
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 tsp baking soda

Instructions

  • Beat all waffle ingredients together until smooth and well combined. Preheat your waffle iron and cook according to the manufacturer’s directions until golden and crisp.
  • For the syrup, combine the butter, buttermilk, and sugar in a saucepan and bring to a gentle boil over medium heat.
  • Remove the pan from the heat and stir in the vanilla and baking soda.
  • The mixture will bubble up noticeably when you add the baking soda, so use a deep pan and stir until the bubbling subsides. Serve the warm syrup over the freshly cooked pumpkin waffles.
